Happy St. Patrick's Day! A year after we were first visited by leprechauns, it has happened again. This morning Desmond woke me up and told me the leprechauns had sneaked into his room in the night and lined his bedroom floor with books.
He then went into the bathroom to find that, just like last year, those darn leprechauns didn't flush after using our toilet.
And yet again, they had tried to escape out the back door.
They had also done a few other things to our kitchen -- they piled some green things from around the house on the kitchen table, put my utensils inside the fridge, turned our recycling bin upside down, and changed our music player to Irish music.
I didn't get a picture of it in time, but the leprechauns also built their own trap in the living room out of all green blocks. Desmond found it and was hoping a leprechaun had fallen into its own trap, so he looked inside. What he found wasn't a leprechaun -- he found some of their gold they'd left behind!
When the excitement was over, we sat down to have a festive breakfast of leprechaun toast, leprechaun muffins, and green pears. Yum!
The leprechaun toast is none other than Auntie Teresa's famous avocado toast (mashed avocado spread like butter over toast, with a little s&p sprinkled on top). The leprechaun muffins are from a recipe I found online a while back. The recipe is for spinach muffins, but I figured if they're green, we're gonna call them leprechaun muffins. They might look and sound gross, but they're really just a banana muffin that's chock full of spinach.
